Pudding Puffs
1 tsp Dry Yeast
1/8 Cup Warm Water
1/3 Cup Milk
1/4 tsp Salt
1 Egg
1/8 Cup Melted Butter
1/4 Cup Sugar or Honey
1/4 tsp Ground Cardamom or Cinnamon
2 Cup Flour
1 Package Instant Pudding (prepared as directed on box)
Sprinkle yeast over warm water, let stand 3-5 min, stir together. Beat in milk, sugar, salt, cardamom, egg, and ½ cup of the flour. Beat 2-3min or until smooth. Stir in butter. Add enough of remaining flour to make dough workable. Cover and let rest 15 min. Kneed on floured board until smooth and elastic. Leave to rise in a greased covered bowl of 1 hour. Punch down, and let rise ½ hour. Cut and roll dough into 1-1 1/2 inch balls. Fry in 350 oil until golden brown. Roll in sugar and leave to cool. Once cooled fill a kitchen syringe or pastry bag with fine tip with pudding. Insert tip in to side of fried ball and slowly fill until pudding comes out around tip.
Instead of pudding you can also use jelly, cake icing, whip cream, almond paste or any other pudding like ingredient, or nothing at all.
You can also roll out and use deep cutters to make shaped puffs. I make my dad maple leafs on Canada Day, and my son stars for his birthday.

Sounds like old fashioned filled doughnuts. Yum, what good memories they bring back. I will try these for my grand daughter and start some new memories
