This one is off or the Shirriff Box and they are delicious and very easy!!
Easiest Ever Lemon Squares
1 cup four
1/4 cup white sugar
1/2 cup butter/marg
Combine and press into 8" square pan
Bake for 15-18 min until lightly browned at 350
Remove and spread 1/3 cup Raspberry Jam over base
Beat 2 eggs until light and creamy, add 1 pkg of Lemon Pie Filling, and 1/2 cup of ground almonds
Pour over base and jam layers, and sprinkle with 1/4 cup of sliced almonds
Bake 20-25 min at 350 nutil set
Cool

Here's a good one, EASY!! & Yummy!
Merenge cookies
2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 teaspoon vanilla
Beat untill you can form stiff peaks and then add:
3/4 cup of sugar a little at a time while beating.
Fold in 1 cup chocolate chips
Put a brown paper sack on your cookie sheet ( opened up and layed flat) and bake at 350 for 20 min.
My grandson asked me how I got the marshmallow in it! I love that it has all the protein of an egg and none of the fat. Depending on how big you make your cookie drops I got 20 or 24 cookies out of one batch. Just filled my "bun pan" perfect.
Nestles melts, but the cheap ones look like something Bossy left in the pasture -- kind of adds to the illusion. Push the scoops together a little so it looks like you got a corner of a Holstein spot.
