      My mother, a product of the Great Depression, was great at taking something simple and making something wonderful - food, sewing, whatever. She called this Poke Cake. Our friends call it the Picnic Cake; I've shared the recipe with many after a couple of gatherings and now someone always brings it to a picnic.


      Poke Cake or Rainbow Cake (The Picnic Cake)
      Recipe from: Mom

      Serves: 12

      Ingredients
      1 package (18 1/2 oz) Betty Crocker Super Moist White Cake mix
      1 package (6 oz) Jell-O gelatin (any flavor)
      1 1/2 cups Boiling water
      1 container (8 oz) Cool Whip, thawed OR 8 oz (1 cup) prepared DREAM WHIP


      Recipe
      Prepare cake mix as directed on package in a 9 x 13 inch pan. Bake. Cool.
      Prick cake with fork at 1/2-inch intervals.
      Meanwhile, dissolve flavored Jell-O separately in Boiling water.
      Carefully pour Jell-O mixture over cake. Chill 3 to 4 hours.
      Top with 1 top of whipped topping. Chill. Garnish as desired.
      Keep refrigerated.


      Notes:
      Use sugar free Jell-O to cut down on carbohydrates.
      Use Cool Whip Free to lower fat content.


      Serving Suggestion:
      Great recipe for parties and get-togethers! Kids love it!
      Red Jell-O for Christmas or Valentine’s Day, Green for St. Pat’s or Christmas. Red and Blue for Independence Day. Yellow and Orange for Easter.

      MINUTE CHOCOLATE MUG CAKE...the most dangerous cake recipe in the world.

      4 tablespoons flour (plain, no self-rising)
      4 tablespoons splenda (or artificial sweetener)
      2 tablespoons cocoa
      1 egg
      3 tablespoons milk
      3 tablespoons oil
      3 tablespoons chocolate chips (optional)
      A small dash of vanilla flavouring
      1 microwaveable coffee mug

      Add dry ingredients to mug, and mix well
      Add the egg and mix thoroughly.
      Pour in the milk and oil and mix well.
      Add the chocolate chips and vanilla flavouring... and mix again.

      Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed!
      Allow to cool a little, and tip out onto a plate if desired.
      EAT! (this can serve 2 if you want to feel slightly more virtuous).

      And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

      We make a biscuit cake at home, but my mam is always telling me what to put into it step by step.

      Biscuit Cake Receipe
      6oz /170g Plain biscuits (crushed)
      4oz/113g Margarine
      2 Tablespoon Ordinary Sugar
      2 Tablespoon Golden Syrup
      block of chocolate 150g (1/2 for mixture, 1/2 for choc. topping) 5.3 oz
      Raisins or sultanas optional

      Crush biscuits first, we put them in a bag and crush them with rolling pin.
      Melt Margarine, syrup, sugar and chocolate together, slowly, it will burn easily.
      Once mixture is ready, mix up the crushed biscuits.
      Place in any tray or tin can also use a springform baking tin. Melt the second half of choc. bar and put it on top of cake. Leave to set for an hour, but ready to eat at any time

      I love Poke Cake, and haven't made it in years. I use to make it July 4 and decorated it like the American Flag. Using blueberries and strawberries. Always a hit. Thanks for the memory and reminding me...it's time I make this again.

      1 cake mix - any flavor
      1 can diet soda - any flavor

      Mix the two together - back as directed on box !!!

      Suggestions:
      dunkin hines pineapple supreme cake mix with diet sprite
      yellow cake mix - diet root beer
      white cake - diet orange soda
      chocolate cake with diet cola or diet Dr. Pepper
      spice cake mix with diet Sprite.

      I tried the diet Coke with chocolate cake mix about two years ago, and now it's the only way anyone wants cake around here. It's really amazing. I hadn't thought of mixing other flavors, though so now I'll have to try some of those. I am insane for root beer - bet that's a yummy cake!

      Do you make the cake as directed and add the can too or do you replace an ingredient with the can of pop?
