      Sorry to hear about finding out that you are a diabetic. I know how hard it is to not have anything with flour. I have celiacs and I can't have any gluten. Everything has gluten in it. My SIL is a diabetic and if I run across any recipes I will pass them along.

      123mccoach. You probably should consult with a dietitian who specializes in diabetes care. Your health care provider can make a recommendation/referral for you. My hubby is diabetic but is still able to eat many things that he thought he couldn't. Just be aware of the number of carbs you are intaking at meals and snacks. Of course, requirements will vary for each individual.

      Thank you so much la_cole, my doctor has sent a referral to St Anthonys Hospital where they have a program for new diabetics. I go for 1 hour next tuesday. Then I go to a group meeting with a diatition and people like me. I have to go for 10 meetings. I'm sure this will all help and teach me what to do. I just thought everyone is posting receipes and might have some they would like to share with the diabetics at this sight. I know what I have to stay away from but I never thought about cooking/baking things and the things I can't have going into those receipes. I don't get insulin until the doctor sees what my blood sugar numbers look like. I'm testing twice a day and keeping a log of the numbers, time and what I had to eat between the tests. I'm still hoping I will only have to take the pills. I'm not afraid of needles I'm just thinking of convenience.

      You will get use to it eventually & don't overuse the splenda & artificial sweeteners, they have a natural laxative effect & not a pleasant one, I was heart broken last year when I found out I was diabetic. Sugar is not your enemy you just need to readjust how much your total carbs are, I still eat plenty of fruit & I hate whole wheat anything so I found some great smart taste pasta, e-mail off post & I can help you if you'd like. PS I lost 30lbs without even trying, I had a broken foot so exercise wasn't an option. hugs, Sue

      123mcmcoach - it's hard being a diabetic at times - but if you learn to eat properly - you can survive. One hint learn not to drink the diet sodas and go straight to water. Once you get past that one - life is easier. I drink a lot of tea and water and very sledom do the soda thing.

      Once you get over eating or drinking the sweets - you really don't miss them. My hardest part was giving up potatoes - well at least having them at every meal. I was raised on meat and potatoes. And no eating so many taters was the hardest as was not eating a lot of pasta. Small amounts of both are ok.

      And Hershey does make a sugar free chocolate. IT tastes great - but just like everything else - it must be eaten in moderation!

      Oreo Truffles

      1 1lb 2oz package of Oreo cookies
      1 8 oz package of cream cheese
      2 boxes of Bakers Semi-sweet chocolate

      Remove 9 cookies from the package. Crush them into fine crumbs in a ziploc bag with a can or riolling pin.

      Place the other 36 cookies into another large ziplock bag and crush them the same way, but they can be a bit coarser.

      Mix the 36 cookies with the cream cheese until well mixed.

      Melt the chocolate in a small shallow bowl. (Put in a microwave safe bowl on "defrost" for 30 seconds at a time and stir. Be careful not to burn it.)

      Roll the cookie mixture into 1inch balls and dip in melted chocolate. Place on waxed paper lined cookie sheet and sprinkle with remaining crumbs.

      Refridgerate for 1 hour. Store in airtight container in the refridgerator for longest freshness.
