1 lb of asparagus
8 oz of penne pasta
1 cup of ricotta cheese
1/2 parmesan cheese
1/2 of pasta water zest of one lemon
salt and pepper to taste
1tbsp lemon juice
cook past as direction say blanch asparagus for a few minutes then cut in to 1 inch peaces mix with cooked pasta cheeses and pasta water and serve warm or cold.
