      Default It's almost summertime.... cucumber recipes

      This recipe came from the Texas Quiltworks newsletter - sounds good!

      I would definitely use Dark Rye bread and low-fat cream cheese for this spread. And I might mix in a little dry Italian salad dressing mix and chopped watercress.


      From My Little Black Book of Secret Recipes and Treasured Family Favorites
      By Jo N. Howard, Home Economist, Food Stylist and Catering Consultant

      1 lg. or 2 med. cucumbers, peeled

      1 (8 oz.) pkg. cream cheese, softened
      1 (3 oz.) pkg. cream cheese, softened
      1/4 c. mayonnaise
      2 to 3 green onions, finely chopped, tops & all
      2 tbsp. minced fresh parsley
      2 dashes Tabasco
      1/2 tsp. seasoned pepper

      Grate cucumber and carefully press out moisture with paper towels. Mix all ingredients well and spread on thin bread, crusts removed. Refrigerate.

      Note: Use additional mayonnaise if necessary to moisten filling for easy spreading.

      I make a cucumber salad that I just love.

      Slice your cucumbers and add some diced onions to taste. I use either the red ons or vidalias.

      Add some sliced olives black/and or green

      Add some feta cheese.

      Add some bacon bits - the real stuff.

      Then sprinkle with your favorite vinegrette type dressing.

      Let set for about and hour or so and serve.

      Amounts vary depending on how many cucumbers you add. I've also added some thinly sliced carrots and radishes (not to many)to it as well.

      Oh yeah - I've also added peppers - green or yellow. If you like spicy - you cn heat it up a bit that way.

      Both recipes sound delicious. I always end up with way too many cukes so a new recipe is definetly needed.

      Do you can good things like relish and bread and butter pickles? I used to but I end up with way to much stuff for sis and I to eat over the winter months. I mean - you can only eat so much relish and bread and butter pickles.

      And my dill pickles never come out good - no matter what recipe I've tried.

      I do can. I have a garden I grow every year and can vegetables for my family for the year. I make relish, bread-n-butter, dill, sweet, etc. I also can beets, okra, tomatoes,& green beans. I make salsa, speghetti sauce,& chili. Then I freeze squash, okra, tomatoes and cold storage about 300 lbs of potatoes and about 100 lbs of onions. It's a ton of work but saves us a lot of money. It does cost us a lot of labor but we enjoy it. With our frequent travels it is VERY difficult to keep the weeds out so I made a "deal" with the Lord. I told Him that if He would take care of my garden I would share it. Last year we took over 800lbs of vegs to the foodbank. (This was along with all the produce we needed). We also have fruit trees so I can apples, peaches, and pears. I dried pears a couple of years ago for the first time. I love them but my family hates them. They do have a rough texture to them but I like chewy stuff like that so go figure. Dried apples are great too.

      hmmm - I'd love a nice cold cuke for lunch today!!! Sis went to get car fixed and was gonna pick up some groceries. I hope she picks up a cuke!!

      Default Cucumbers

      Does anyone have a recipe for the vinegar, water, sugar mixture you pour over cucumbers and refrigerate them. Don't have a clue what this would be called but my mom used to make these and I guess I should have paid more attention as she's gone now and I can't find that happy medium for the mixture as it never tastes the same.

      I used to pour enough vinegar on to the cucumber to cover the slices, add about a tablespoon of sugar and let the cucumer steep in it.

      I call them refrigerator pickles. Here's my recipe. They will keep for about a month - if you don't eat them first!

      4-6 cucumbers sliced (I use pickling type)
      Bring to boil 1 cup water, 1 cup white vinegar and 1/4 cup sugar.
      Remove from heat and add 1 teaspoon picking spice. Cool slightly - you don't want to cook your cukes.
      Pour liquid over cucumbers, cover and refrigerate.

      If you don't like a sweet pickle, then reduce the sugar to 2 tablespoons (or to taste).
