thi sis a great rec. I am always on the look out for things diabetics can have and this one fits the bill. thank you for the rec![]()
Just for kicks, this is the calorie count for this wonderful recipe (from 123mccoach).
The cake mix = 1680 calories. The pineapple is about 270 calories. Together, they are 1950 calories for the prepared cake.
That means, if you cut generous slices -- say into 10 servings, not 12 -- you are only eating 195 calories.
This cake is definitely a winner in so many ways.![]()

I'm not with it tonight. Where is the recipe???
It's not you!!!! I was referencing the pineapple cake recipe from 123mccoach which is a box of angel food cake mix and a can of crushed pineapple. It is a few threads down from this one.
Haven't tried it myself, but was curious about calorie count, hence my little info addition.
Hi, the recipe is 1 box Angel Food cake and 1 can of crushed pineapple. That's all, nothing else. Then follow the baking degrees and minutes on the box. Make sure you only fill your cake pans half full because angel food cake expands a lot and it will rise over the sides and you will have a mess. (ask me how I know)
Now I have to make this cake AGAIN. Made it while in the States and Brian will just have to test it....
Do you add the pineapple to the cake mix before you bake it?
KathyJT, add the crushed pineapple to the cake mix and omit the water. Otherwise follow the directions on the cake mix box.
A smile is a curve that straightens things out.

Add the pineapple to the cake mix then put in any baking pan. However, remember you can only fill it half way because it expands. I put mine in a bunt cake pan and the extra goes in a bread pan. If you put it in a 9x13 pan I would think you would have to bake it less time. I never have baked it in a 9x13. A bunt pan has a hole in the middle and is quite tall. I'm sorry you all are having such a problem with this. It is a very simple cake recipe, 2 ingrediants, you put it in a baking pan like an agel food cake pan type, and bake it the same degrees and minutes it says on the box. I have never frosted it, it tastes good just the way it comes out of the oven. But if you want a frosting I would put a real light type drizzle kind of frosting. Maybe powdered sugar, a little milk, and some kind of flavoring like almond, lemon, etc. But I think it would take away the flavor of the cake.
I hope this straightens out any problems you are having with the recipe.
Thanks bunches for your help. I've not gotten around to making this, but picked up the goodies. Maybe because it's so simple is where I was confused, because I always make everything from scratch. And when you talked about pans, I just couldn't visualize why with only two ingredients it would spill over the edge of one pan. Yikes! I don't want to have to clean my oven. tee hee
Thank you again.![]()
Brian is in cake heaven. Three packets of Betty Crocker Angel Food cake arrived by courier this morning. yes I had a can of pineapple in the store cupboard, so I got work, it wasn't hard to make, he salivated while that cake cooked. I made him wait until cooled and then cut him a sliver of it. he is on a food regime and is still losing weight, so gave him enough appease that food demon inside of him. I, of course just had to have a slice, it melted in the mouth and no guilt with it. Both of us have resisted having another portion.

Sounds yummy! I will have to try it. Does Angel Food cake raise okay at hight altitudes?
Life is too short even on the longest days.
Roxanne, Just follow the directions for high altitudes on the box. If there isn't any then I would think to just add the pineapple and bake as the box directions.
I am very happy everyone is enjoying my cake.
It rises at below sea level, where we are. I used to make Angel Food cake when we lived on the Central Plateau in New Zealand and I never had any problems with cakes rising. I could make a couple of wise cracks about angels and rising, but I will refain.

I finally worked up my finicky taste buds to try this cake and it is heavenly. I made it for dessert tonight and even my daughter liked it and she hates everything.
Watermelon..you are missed.
Tracy...where are you.
Yessss....another convert to this yummy cake...reminder to self..must order some more cake mix when I come back from the cruise...

You can do almost same recipe with a white cake mix. Just add any fruit mix like pineapple or fruit cocktail and one can of clear pop (like 7 UP or sprite) If you want chocolate, (hi Sonia) just use a chocolate cake mix and cherry pie filling, and add one can of cola pop (coke or pepsi). This is actually a Boyscout recipe and we cook it in dutch ovens. You can just bake it in a regular oven following the times on the box. (Oh, my son doesn't want anyone to tell what the secret ingredient is: pop).
Y'all keep tempting me to make this cake. I've had the fixin's for weeks, but I keep moving it to the back burner, because chocolate always wins...sigh. It really sounds like a nice cake for summer as hot as it is.![]()
