PINA COLADA CAKE
Ingredients
(Whatever brand) deluxe moist yellow cake
1 5.1 oz pckge instant vanilla pudding
milk
1 tub whipped topping
coconut extract
sweetened coconut flakes
* mix cake according to the pckg directions
* add 3 tsp coconut extract to the batter
* Bake as directed
* I split the batter into 2 pans to make a layer cake
* allow to completely cool
* mix vanilla pudding mix with 2 1/2 c cold milk, 1 tsp coconut extract, tub of whipped topping
* allow to set to a spreadable consistency
* layer pudding mixture between the cakes and then cover the 2 cakes with the yummy stuff
* sprinkle with coconut if you like
* chill in frig

This sounds wonderful! I'm going to try it, the only problem is that I'll have to make it gluten free.

I just wanted to let you know that I did make this cake gluten free. And it was wonderful!! You couldn't tell the difference!

white cake mix
cream of coconut instead of the water called for
1 teaspoon rum extract
mix and bake the cake as directed on package trading the cream of coconut for the water called for.
1 recipe of cream cheese frosting
1 teaspoon rum extract
1 teaspoon coconut extract
1 can crushed pineapple drained
2 cups whipped cream
blend all the above together and spread on cake, sprinkle with coconut or blend the coconut into the icing.

Sharong, your cake sounds wonderful. I don't like coconut flakes but I love the taste of coconut. With the extract in there I'll get the taste and not the flakes.
