This recipe is from my husband's family - it makes a wonderful and easy holiday cake/bread - looks like fruitcake, but most people don't like fruitcake.
If you like chocolate covered cherries, you'll probably like this.It looks beautiful enough for a gift, too.
Preheat oven to 325º
Grease two loaf pans or a large bundt pan.
Drain a jar of maraschino cherries and save the juice. (a 10-13 oz jar will be fine)
Beat three eggs until light and fluffy.
Pour the juice from the cherries into the eggs and beat again.
Add a cup of sugar, a half teaspoon of salt, a half teaspoon of baking soda and two teaspoons of baking powder and beat again.
Stir in two cups of flour and mix just until the batter is smooth.
Stir in the drained cherries and 1½ cups each of chocolate chips, chopped dates, (I usually omit these) pecans and walnuts. Fold until the ingredients until everything is coated with batter.
Spoon the batter into the loaf pans or bundt pan and bake at 325º. Check at one hour - it may need an extra 10-15 minutes.
Loosen the bread just out of the oven but leave it in the pan(s) until it's cool so that it won't dry out.
Optional addition to eggs: 1/4 cup of vegetable oil or melted butter

sounds like a good recipe Got to try it since we are nuts over chocate coved cherries .We love the clear filled 1's the best.

Ok as much as I like Chocolate Covered Cherries, This recipe makes me want to go to the supermarket today to get the ingredients. I only have one question, Down at the bottom of the recipe you wrote Optional addition to eggs: 1/4 of vegetable oil or melted butter Is it 1/4 teaspoon or 1/4 tablespoon. Also can you pour a white glaze icing over the top of this bread/cake or do you think that would make it to sweet?
This sounds sooo good. I think I would leave the dates in as I love them! I make a mean date cake - lol.
And I think I would add the butter as well it would make the cake moister.
I'm sorry - it's a quarter cup of melted butter or vegetable oil. I'll fix that. The cake is very moist without it, but some people like a little heavier texture than is made with the original recipe.
I love dates, too but I'm the only one in the family who does, so I either leave them out, or I pour the first loaf and then mix the dates into the remaining batter before I pour the second loaf.
You could indeed put a white glaze over the cake, but you might want to taste the cake first because it's pretty sweet all by itself.![]()

This sounds really tasty as an alternative to fruit cake. I have to laugh at myself because I am starting to collect all of you SICK fans great recipes like the free embroideries!!!!

Glad this one has been found again. Must have missed it back in December. It does sound yummy. Think I will give it a try and leave everything in, as per the recipe.
