      Default Easy Chocolate Cake/Muffins

      Howdy y'all. I just tried a new to me recipe for chocolate cake...but I made muffins/cupcakes.

      The Best Chocolate Cake Ever
      1 box deluxe devil's food cake mix. I used Duncan Hines.
      1 cup water
      1 cup Sorrento whole milk Ricotta cheese.
      1/2 cup vegetable oil
      2 eggs

      Preheat oven to 350 degrees.
      Mix all ingredients on low speed for 1 minute. Scrape bowl. Mix on medium for 2 minutes.
      * For cake: Grease bottom and sides of 2 9"x2" deep cake pans. Divide batter between pans. Bake for 30-35 minutes. Cool for 10 minutes before frosting.*

      Muffins/Cupcakes: Line muffin pan with paper liners and fill each about half full of batter.
      Bake 19-22 minutes.

      I left mine without frosting, cause DH doesn't like all that sugar. tee hee.
      But any favorite frosting would be good.

      This does sound yummy and easy to do. My 17 yo is in to baking now. Will have to let her see it and see if she wants to try it too.

      That's great. I started cooking my freshman year in HS...Yikes that was so long ago. I had the most wonderful Home Economics teacher and she taught me so much about cooking and sewing. I treasure those years with her as my teacher.

      Anywho, something your daughter might like to try is...instead of cupcake liners, use regular ice cream cones and fill half with batter. Set'em in muffin tins to bake and bake as you would muffins. Frost with homemade or can frosting and decorate with sprinkles of choice. They're such fun for any occasion. And the good thing is you can eat the whole cupcake. tee hee

      Now she would love to bake them in ice cream cones and do the sprinkle thing. May let her do these this weekend.

      My mom used to bake cup cakes in the ice cream cones. Especially when she had to take them to school for our class. It was so cool!!!!! and that was - well just after the stone age anyway

      I started doing the ice cream cone cakes a hundred years ago, too. tee hee. My daughter loved'em and so did all her friends. Then started taking'em to lots of different parties and they were always a big hit. Just a bit different and fun.

      Don't think I have ever seen cupcakes made in ice cream cones... They must be a best seller at bake sales. Mmmmmmm, chocolate...

      That's a great idea la_cole. I don't do bake sales, but I bet they would be good sellers. Especially since they're chocolate. tee hee
