This is a great served warm or cold.
15 oz of frozen soy beans boiled in salted water for 5 minutes, drained.
1/3 cup tahini
1/4 cup lemon juice
2 tablespoon olive oil or more if needed to make hummus smooth
2 garlic cloves sliced into quarters
1/2 cup -3/4 cup roasted red peppers (depending on taste)
Preparation:
In a food processor, pulse garlic until minced, add soy beans, tahini, lemon juice and olive oil. Process until smooth scrapping sides of bowl occasionally. Add red peppers and process until desired consistency is reached.
Garnish with parsley. Serve warm with hot pita bread or toasted pita chips. Can be used on a sandwhich in place of mayo or mustard.
Roasted red pepper hummus can be made up to two days in advance and stored in an airtight container in the refrigerator. Heat up in microwave or on stovetop to serve or it may be served as a cold dip too.
