Salmon Chowder
1 1/2 to 2 c cooked salmon
3 T butter
1 large onion, diced
1 1/2 c celery, diced
4 medium potatoes, diced
15 oz creamed corn
2 T cornstarch
12 oz evaporated milk
Optional:
1 small to medium carrott, diced
2-4 slices cooked bacon, crumbled
In 5 qt pan or larger, saute celery and onion in butter until brown. Add potatoes and carrots (optional) and enough water to cover. Simmer 20 minutes or until potatoes are done (do not drain). Add cornstarch to 1/2 to 1 c water and add to vegetables. Increase heat to thicken while stirring. Add evaporated milk, salmon, creamed corn, and bacon (optional), bring to boil stirring frequently. Remove from heat and serve.

Creamed corn is a partially puréed preparation of sweet corn which releases the liquid contents of the kernels. Sugar and starch may be added and in home-made version, some variety of milk, perhaps even cream. In store-bought canned preparations, adding milk is less common.
I generally use the store-bought version of creamed corn. However, I sometimes use my own frozen corn and after defrosting, place it in the food processor for a couple of seconds to break up the kernels.

this is completely unknown here. we have canned corn (in salted water), but not puréed one.

this looks delicious, does it matter if you can use canned salmon or must it be fresh salmon. We eat a lot of salmon.
