This sounds good! I love peaches and this is something that will be different for me to try on my husband and I. I have to go to the store tomorrow to get fresh peaches and cream. Which is better sour cream or regular cream?
Ingredients:
1/2 c butter or margarine
2 c flour
1/4 t baking powder
1/2 t salt
1 c sugar
9-12 peach halves (may be slished, fresh or canned. If using canned peaches, drain well)
1 t cinnamon
2 egg yolks
1 c heavy cream or sour cream
1) Pastry crust: Work butter into sifted mixture of flour, baking powder, salt, and 2-3 T of sugar until mixture looks like a coarse mean. Pat an even layer of mixture over bottom and up sides of an 8x8 or 9x9 baking dish. Using hands, press firmly until pastry holds.
2) Arrange peaches on top of the pastry. Sprinkle fruit with mixture of cinnamon and remaining sugar. Bake at 350F for 15 min.
3) At end of first baking cycle, combine egg yolks and cream. Pour mixture over fruit. Bake additional 30 min.

I don't know if I would want to cook the regular cream. I think I would prefer the sour cream.
Boy howdy, this sounds so yummy. I'm not a sour cream lover either and will use regular cream..just happen to have some in the fridge. I've been reading about this recipe discussion and y'all have sure made me hungry. tee hee

For those of you wondering how my diabetic hubby could eat this, here are my modifications:
reduce butter by 2 T (use 3/4 stick)
reduce sugar to 1/4 c and add 6-8 packets of Truvia
replace 1 c flour with Carbalose flour
replace 1 c cream with 1 c fat free half-n-half
Bake according to original instructions.
This is the first time I used the modified recipe and it worked very well. We were both pleased with the results.
