      Default I need an easy salsa recipe

      I suddenly have tomatoes out the woo woo does anyone have an easy salsa or ANY easy tomato recipe ??!!!! Thank you in advance

      hi angie.

      i don't measure, but if that's o.k. with you, this one is really easy.

      3 or 4 large tomatoes.
      1 jalapeno
      1 handful of cilantro
      juice of one lemon
      1 TBS chili powder
      1 onion ( i like the red ones best, but you can use any)
      garlic (i buy the stuff already chopped in oil)

      throw the onions, tomatoes and jalapeno in a blender. grind it to your favorite consistency... add everything else, flip it on again to chop the cilantro up. it's done, and tastes great. if it's not hot enough, add another jalapeno. if it's too hot, throw in a couple of more tomatoes.

      this is good with canned tomatoes also. i don't use salt as there is salt on the chips already.

      You know you can always cook up the tomatoes and make sauce and either can it or freeze it. There's nothing like a good homemade tomato sauce!! Or cooked tomatoes to throw into a pot of chilli come winter. Oh yeah - now I'm hungry again - lol!

      I have NO maters - I can be there by noon tomorrow hahaha

      If you go into the canning section of say kroger - there is a Salsa packet (sorta like the sloppy joe mix/taco seasoning mix) - it does make up a good salsa.

      A delicious salsa recipe made with fresh ingredients.
      Ingredients:

      • 3 tablespoons finely chopped onion
      • 2 small cloves garlic, minced
      • 3 large ripe tomatoes, peeled and seeds removed, chopped
      • 2 hot chile peppers, Serrano or Jalapeno, finely chopped
      • 2 to 3 tablespoons minced cilantro
      • 1 1/2 to 2 tablespoons lime juice
      • salt and pepper
      Preparation:

      Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then let drain throughly. Discard water. Cool.
      Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4

      Thank you all for your input !!! I am going to give them a try !! I sent about 30 tomatoes home with my stepmother and sister in law yesterday and I still have a BUNCH !!!

      HMMM it's only about an 8 hour drive or so from my house to the part of Ohio myt family lives in - maybe I'll come up and "share" your tomato harvest with you - lol.

      You can FREEZE extra tomatoes for winter usage to be
      used in sauces and soups

      Last year I froze a "ton" of tomatoes. It is a good thing, because I don't have any to freeze this year! I love to add them to spaghetti sauce or soup! Yummy!
